is a great delicacy that many people love. For the best taste use a water smoker to make smoked turkey. These are available wherever barbecue grills are found.Water smokers are available in electric, gas or charcoal model, and all work well. Charcoal smokers have two pans - one for charcoal and one for liquid which creates the moist, hot smoke needed for cooking.&lt;br /&gt;&lt;br /&gt;If you don't own a water smoker, you could also smoke your turkey on the grill using the Indirect Smoking Method.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Important Points&lt;/span&gt;&lt;br /&gt;Food safety is of primary concern when smoking turkey. Turkey breasts, drumsticks, wings and whole turkeys are all suited for smoking, although for safety's sake, stick with whole turkeys that&lt;br /&gt;weigh 12 pounds or less. A larger turkey remains in the "Danger Zone" - between 40° F and 140° F for too long.&lt;br /&gt;&lt;br /&gt;Do not stuff a turkey destined for smoking. Because smoking takes place at a low temperature, it can take too long for the temperature of the stuffing to reach the required temperature of&lt;br /&gt;165° F, not to mention that smoked stuffing has an undesirable flavor.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Recipes&lt;/span&gt;&lt;br /&gt;Smoked turkey doesn't need a recipe as seasonings, ingredients and spices are not necessary. You can add&lt;br /&gt;&lt;ul&gt;&lt;li&gt;a little salt, &lt;/li&gt;&lt;li&gt;pepper or &lt;/li&gt;&lt;li&gt;poultry seasoning, &lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;but the smoke provides the principle flavor. Don't be afraid, however, to get creative with that smoke by experimenting with different types of wood -- hickory or mesquite being the most popular. Any chunks or chips of water-soaked hardwood or fruitwood will work, but do not use softwoods like pine, fir, cedar or spruce as they will give the food a turpentine flavor and coat it with an ugly and inedible black pitch.&lt;br /&gt;&lt;br /&gt;Also, instead of smoking with &lt;span style="font-weight: bold;"&gt;water, try wine or juices. &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;For the turkey in the photo above, we used Hickory Chips that had been soaked in a mixture of red wine and apple juice. This same liquid was then poured in the water pan and used for the smoking process.&lt;br /&gt;After setting your wood chips to soak (photo 1) it's time to start building a fire. We used a chimney starter (photo 2) and a good quality charcoal After the coals were well lit, we dumped them into the charcoal pan and added more (photo 3).&lt;br /&gt;&lt;br /&gt;Once the fire was going nicely, we set the water pan in place along with the smoker's cylindrical body. We strained the wood chips out of the soaking liquid (photo 4), adding the liquid to the water pan, then filling the pan with additional liquids.&lt;br /&gt;Place the lid on the smoker and wait for the internal temperature to reach 250° F to 300° F. Some smokers have built in temperature indicators, if not use an oven thermometer to determine temperature.&lt;br /&gt;&lt;br /&gt;Once you have the right heat, quickly place the turkey on the top grill rack and replace the cover (photos 5 and 6). Add soaked wood chips to the charcoal through the side door of the smoker.&lt;br /&gt;Add charcoal every hour, as necessary, to maintain 250° F to 300°F.  Replenish the liquid and wood chips as necessary. Heat and liquid are critical to maintaining the hot smoke that cooks the turkey.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Helpful Hints&lt;/span&gt;&lt;br /&gt;Smoking time depends on the size of the turkey, the distance from the heat, temperature of the coals, as well as the outside air temperature. You can roughly estimate about 20 to 30 minutes per pound of turkey, but it's important to use a meat thermometer to be sure your turkey is thoroughly cooked. The turkey is done when the food thermometer, placed in the inner thigh, reaches 180° F (be sure the thermometer is not touching the bone). Unless you have a sheltered outdoor spot, avoid smoking on windy days as this can effect the temperature, or even put out the fire.  Also, avoid opening the cover or door as much as possible. Smoking takes place at low temperatures and opening the lid or door causes quick heat loss. If you must open the door to add charcoal, chips or liquid, do it as quickly as possible and close it and avoid the urge to peek at the turkey during cooking! So that's the tips for smoked Turkey. Hold a small, very sharp knife parallel to the work surface and slide it under the small bones at the "tail-end" lobes of the breast. Slice outward, using a sawing motion and keeping knife next to the bones; lift off bones. Slice down and around breastbone, keeping as close to bone as possible. Pick up by the loosened bone to slice under breastbone next to turkey skin.&lt;br /&gt;&lt;br /&gt;Combine brown sugar, hot water and salt in a very large mixing bowl, stirring until sugar dissolves. Cut the zucchini in half lengthwise. Scoop out the seeds and pulp with a spoon, leaving a 1/4-inch-thick shell. Chop the zucchini pulp and reserve.&lt;br /&gt;&lt;br /&gt;Cover the bottom of a large frying pan with about 1/2 inch of water. Add salt and bring to the boil over high heat. Add the zucchini shells and lower the heat to a simmer. Cook, covered, for 5 minutes, until the shells are bright green and partially cooked. It may be necessary to cook the shells in 2 batches.&lt;br /&gt;&lt;br /&gt;Remove the zucchini shells to a colander and rinse with cold water. Stir until salt and sugar are dissolved.&lt;br /&gt;&lt;br /&gt;Put the turkey breast in a large Ziploc bag, fill with brine, squeeze out all the air and seal; or put turkey breast in a large bowl, put a small plate on top to hold it under, and fill bowl with brine. Refrigerate for 24 to 48 hours (no longer, or the meat will be too salty).&lt;br /&gt;&lt;br /&gt;Remove turkey from brine, rinse, and dry. Rub lightly with cooking oil. Slow-cook in a smoke-cooker, or covered barbecue using the indirect heat method, and adding water-soaked smoke chips from time to time. Place a meat thermometer in the thickest part of the breast and cook until it reaches 165 to 170 degrees. If skin looks dry at any point, brush with a little more oil.&lt;br /&gt;&lt;br /&gt;For best flavor and appearance, cool to room temperature, slice, and serve at once. After soaking, rinse off brine and dry with paper towels. Oil bird lightly with salad oil (not butter). Anchor neck skin with skewer. No need to tie legs if skin is unbroken. Pull leg tendons before baking.&lt;br /&gt;&lt;br /&gt;Place &lt;span style="font-weight: bold;"&gt;turkey &lt;/span&gt;on rack, breast side down. Bake in this position entire time. Do not cover &lt;span style="font-weight: bold;"&gt;turkey &lt;/span&gt; with foil or anything.&lt;br /&gt;Bake at 350 degrees for 1 hour, then 250 degrees thereafter (12 to 14 pound bird takes 12 hours). Smaller &lt;span style="font-weight: bold;"&gt;turkey&lt;/span&gt; at least 1 hour per pound.&lt;br /&gt;&lt;br /&gt;Can be put in a browning bag, add 2 to 3 tablespoons flour and 2 cups water seal bag, bake at 350 degrees for 1 hour and at 250 degrees approximately 3 more hours. Sprinkle brown sugar over drumsticks, then the mustard, soy sauce and Worcestershire sauce over the drumsticks.&lt;br /&gt;After the drumsticks have been thoroughly coated with the other seasonings, liberally sprinkle Badia seasoning over the drumsticks, then rub this mixture in.&lt;br /&gt;Using the injector needle, begin injecting the mixture into the drumsticks. Allow this to marinate in the refrigerator for at least 2 hours. Let the drumsticks come up nearly to room temperature&lt;br /&gt;before smoking.&lt;br /&gt;Smoke in any type of wood smoker that will hold a temperature of 250-275°F for at least 4 to 5 hours. Season inside and out with lemon-herb seasoning, granulated garlic, and salt and pepper to taste, and coat with olive oil.&lt;br /&gt;  7.Do not stuff the turkey.&lt;br /&gt;  8.If you want stuffing, use your favorite recipe, and cook it in the oven, out of the bird.&lt;br /&gt;  9.Refrigerate until ready to start smoking.&lt;br /&gt; 10.Soak 5-6 fairly large chunks of hardwood in water for as long as possible.&lt;br /&gt; 11.DO NOT USE CHIPS!&lt;br /&gt; 12.Set your alarm clock for for about 12 hours before dinner.&lt;br /&gt; 13.Prepare the smoker as follows.&lt;br /&gt; 14. Place 10 pounds charcoal in the fire-pan.&lt;br /&gt; 15.Light the charcoal just barely, but make sure it is enough to keep burning.&lt;br /&gt; 16.(Use an electric starter, or a butane torch, or place charcoal under your oven broiler just until lit. DO NOT use liquid charcoal lighter unless you want kerosene flavored turkey!) Place 2-3 chunks of wet hardwood on top of the charcoal, place water-pan above fire-pan, and fill with water.&lt;br /&gt; 17.Place turkey on the rack above water-pan, cover smoker, and go back to bed.&lt;br /&gt; 18.After about 6 hours, check the smoker.&lt;br /&gt; 19.Stir up the charcoal and add a little more if necessary.&lt;br /&gt; 20.Place remaining soaked hardwood chunks on top of charcoal, add more water if necessary, close the smoker, and relax for another 5-6 hours.&lt;br /&gt; 21.It is almost impossible to overcook the turkey using this method, because it is cooking at a very low temperature.&lt;br /&gt; 22.It will be juicy and tasty.&lt;br /&gt; 23.Obviously the smoking should be done outside.&lt;br /&gt; 24.Smoking indoors can be hazardous to your health.&lt;br /&gt; 25.If the weather is freezing or below, add about 2-3 hours to the cooking time.&lt;br /&gt; 26.The turkey is done when the leg can be moved easily.&lt;br /&gt; 27.Carve immediately before serving.&lt;br /&gt; 28. Rinse with cold water inside&lt;br /&gt;&lt;br /&gt;and out and dry with paper towels. Fill body with orange, lemon and onion. Tuck legs into body cavity. Secure wings by tucking them behind the shoulder. Set aside.&lt;br /&gt;&lt;br /&gt;Melt butter in a small sauce pan. Add soy sauce and mix well. Brush half the mixture over the surface of the turkey. Reserve the remaining half for basting later. In a small bowl combine chili&lt;br /&gt;powder, garlic powder, salt and pepper. Sprinkle spice mixture over the surface of the turkey. Place turkey in a roasting rack or large aluminum pan and pour one cup of chicken broth into the pan.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;For Smoker&lt;/span&gt;: Prepare smoker for about a 6 to 8 hour smoke. Select a mild wood like oak or cherry. Place Turkey in smoker and let run at about 230 degrees F. Don't let the temperature drop too low. Smoke for about 30 minutes per pound or 7 1/2 hours for a 15 pound turkey. Baste with butter mixture half way through the smoking.&lt;br /&gt;&lt;br /&gt;Turkey is done when the internal temperature reaches 165 degrees F. When done remove from smoker and carve. You can use drippings from the turkey in the pan to make gravy.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;For Grill&lt;/span&gt;: Prepare you grill to cook indirectly at a temperature around 350 degrees F. When heated place turkey over the unheated section of your grill and cook for about 2 1/2 to 3 hours. Baste with remaining butter mixture half way through the cooking. Turkey is done when the internal temperature reaches 165 degrees F. When done remove from grill and allow to rest for about 15 minutes then carve. If during the grilling any part starts to get too brown, cover with foil. If during the grilling the roasting pan gets dry add 1 cup of chicken broth. Cut the top of the can off and pour in 12 ounces of beer.&lt;br /&gt;Add bay leaves and thyme.&lt;br /&gt;Set aside. Combine 2 tablespoons brown sugar with the paprika, salt and pepper. The turkey needs to be stable. Once you have the turkey in the smoker let it cook for about 6 hours at a temperature around 250 degrees F. Check for an internal temperature in the thigh of about 165 degrees F. This is when the bird is done. Bring to a boil and continue heating until the sugar and salt have dissolved. Skim off any foam that forms on the top and let cool. In a large (5 gallon or more) stock pot or similar container combine apple juice mixture, 3 quarts of water, oranges, ginger, cloves, bay leaves and garlic. Wash turkey. Remove any fatty deposited you might find and everything from the body cavity. Place turkey in brine mixture and refrigerate for 24 hours. Make sure that the turkey remains completely submerged. Place hickory chips in water and prepare grill for indirect grilling on a medium heat. Remove turkey from brine and pat dry with paper towels. Tie legs together with string and lightly brush turkey with vegetable oil.&lt;br /&gt;&lt;br /&gt;Place turkey on roasting rack inside a foil pan. Place on grill away from direct heat. After 30-40 minutes you will need to wrap the wings in foil to keep them from burning. Brush with vegetable oil periodically. If the breasts start to get too brown cover with foil. The smoked turkey is done when the internal temperature reaches about 175 degrees F. in the thigh or about 165 in the breast.
